Sugar and Spice Christmas Meringues
Title says it all really. All things nice in one mini mountainous morsel. An sugary little cloud, easy to make and adorable adorning any christmas party spread. Extremely good meringues, with that cracking shell hiding chewy marshmallow innards. With an extra little christmas twist, these are ideal for the festive season.
Ingredients (Makes 10-12 mini ones):
110 g Sugar
2 large egg whites
A pinch of nutmeg
A tspn of cinnamon
Preheat your oven to 150C/gas mark 2. Beat the egg whites in a bowl until stiff. No giggling. Once it is making indisputable peaks add the sugar and spices slowly and continue to beat. You arm might be ready to drop off, but I promise, soldier on, it will all be worth it. When you are left with a firm, glossy white mixture.
Use a teaspoon to create your mini mountains on a baking tray lined with baking parchment. Two teaspoons for every meringue seems to work out with a nice bite size mountain. You can shape them as neatly or ‘rustically’ as suits your tastes. Personally, I am quite a fan of the more gnarly meringue. That’s my excuse. Pop them in the preheated oven for 30 minutes and once done, you are ready to serve.
(For an extra festive touch, when plated, throw some toasted pistachios and pomegranate seeds, the bright jewels not only add more flavour and texture, but they look like little jewels amongst the snowy peaks of the mini meringue mountains.)
